Kind of like salmon croquettes, with basil and crushed almonds added. It would probably be better almond-crusted than with the almonds mixed in, but i didn't want to worry with that.

Recipe Ingredients for Italianish tuna paddies

1 can tuna
1 medium egg
1/8 cup almonds (crushed)
1 tbsp extra virgin olive oil
1 tbsp flour
1 tsp onion powder
1 tsp basil
1/2 tsp garlic powder
1/2 tsp red pepper

Recipe Directions for Italianish tuna paddies

Mix everything together except the olive oil. Mash into a paddy or two, and pan-fry in the olive oil in a skillet, until solid and cooked through. For larger batches, use fewer eggs than cans of fish.
