Recipe Ingredients for Italian Zucchini Casserole

3 medium zucchini (about 6 1/2 cups)
3 tablespoon olive oil, divided
1 medium onion, sliced
1 clove garlic, minced
28 ounces tomatoes, diced
2 teaspoon basil, dried
1 1/2 teaspoon oregano
1/2 teaspoon garlic salt
1/4 teaspoon pepper
1 1/2 cup bread crumbs (stuffing mix)
1/2 cup parmesan cheese, grated
3/4 cup mozzarella cheese, shredded

Recipe Directions for Italian Zucchini Casserole

  1. Saute zucchini in 1 tablespoon oil for 5-6 minutes or until tender. Set aside. In same skillet saute the onion and garlic in remaining oil. Add tomatoes, basil, oregano, garlic salt and pepper. Bring to boil. Reduce heat and simmer, uncovered for ten minutes. Remove from heat and gently stir in zucchini

  2. Transfer to 13x9x2 in baking dish. Top with stuffing mix, sprinkle with parmesan. Cover and bakeat 350 for 20 minutes. Uncover and sprinkle with mozzarella. Bake ten minutes longer until cheese is melted.
