A mix of roasted italian veggies and whole wheat couscous.

Recipe Ingredients for Italian whole wheat couscous salad

1 cup couscous, dry
1 cup zucchini, chopped
1 cup summer squash, chopped
1 cup mushrooms
1 cup tomatoes, chopped
15 ounce artichoke hearts, drained
1/2 cup green pepper
1/2 cup onion
1 cup chicken, chopped
1/2 cup italian dressing, fat free

Recipe Directions for Italian whole wheat couscous salad

  1. Cook couscous in water or chicken stock by following the box directions.

  2. Chop and place all veggies on a greased, rimmed baking sheet.

  3. Sprinkle salt and pepper and a bit of garlic on veggies.

  4. Roast for 30 minutes at 400 degrees.

  5. Mix the couscous and veggies.

  6. Pour the italian dressing on the salad and sqeeze a lemon.

  7. Add 1/2 tbsp oregano, salt, and pepper.
