Comfort food. Good for cold and rainy days. I pair it with bruschetta on naan to get more veggies in.

Recipe Ingredients for Italian wedding soup

3/4 cup pearl barley
1 tsp extra virgin olive oil
1/4 pound hamburger
1/8 cup breadcrumbs
2 garlic cloves
1 chicken bouillon cube
1/8 tsp parsley
1/3 pkg frozen chopped spinach
8 cups water

Recipe Directions for Italian wedding soup

  1. Place hamburger in a bowl and add breadcrumbs and various italian seasonings. Mix with your hands and roll into small meatballs.

  2. Heat olive oil in the bottom of a large saucepan until it shimmers. Sauté the meatballs until browned.

  3. Fill the pot with water until it's about an inch and a half from the lip of the pot. Bring water to a boil.

  4. Add barley, garlic, bouillon cube, and parsley. Bring soup back to a light boil. Cover and let boil lightly for 45 minutes.

  5. Just before you're ready to eat, add spinach. The soup is ready to eat once the soup has returned to a boil and the spinach has defrosted.
