Delicious lunch or dinner soup with spinach, sausage and cannellini beans.

Recipe Ingredients for Italian Wedding Soup

4 cups Organic Free Range Chicken Broth
1 lb Baby Spinach
1/2 cup white onion, diced
15 oz. Progresso Beans Cannellini
2 tsp olive oil
1 tsp red pepper flakes
2 cups water
1 tsp Sea Salt - French
3 links Sun-dried Tomato & Basil - Sonoma Brand Hans' Cooked Sausages/Chicken, sliced
1 cup red potatoes, diced
2 tbsp Classic Basil Pesto
2 cloves garlic
1 tsp lemon zest
2 tbsp lemon juice

Recipe Directions for Italian Wedding Soup

  1. Preheat a dutch oven over medium high heat and pour in olive oil. Add onions, garlic and potatoes to hot oil. Sprinkle with some salt. Stir often.

  2. When onions are translucent and potatoes beginning to brown add 1 cup of water. Scrape bottom of pot. When water returns to a simmer add sausage and spinach. Sprinkle spinach with salt and cover for 5 minutes. Drain and rinse beans and set aside.

  3. When spinach is wilted stir into soup and add chicken broth and remaining cup of water. Simmer for 5-10 minutes.

  4. Add red pepper flakes, lemon zest and juice, and beans. Simmer for 10 minutes or until potatoes are tender.

  5. Shut off heat, add pesto, stirring into soup. Allow to sit for 5-10 minutes before serving.

  6. 1 serving = 2 cups (4pts WW)
