A quick hearty soup - quite filling great for lunch or as a quick snack

Recipe Ingredients for Italian Wedding Soup

3 portion ( yield from 1/2 lb raw meat ) Beef, Ground, 85% Lean Meat / 15% Fat, Crumbles
3 large Egg, White
0.75 cup Bread Crumbs, Dry, Grated, Seasoned
3.5 tbsp Parmesan, Grated Cheese
1.5 tsp, ground Basil, Dried
1 cup, chopped Onions
8 cup Soup, Chicken Broth
8 cup (8 fl oz) Water
6 serving Chicken Bullion Cubes
3.5 cup Spinach
1 cup dry Unico Acini de Pepe
1 cup Diced Carrots

Recipe Directions for Italian Wedding Soup

  1. In a medium bowl, combine the beef, egg, bread crumbs, cheese, basil and onion. Shape mixture into 3/4-inch balls and set aside.

  2. 2. In a large stockpot heat chicken broth to boiling; stir in the spinach, pasta, carrot and meatballs. Return to boil; reduce heat to medium. Cook, stirring frequently, at a slow boil for 10 minutes or until pasta is al dente, and meatballs are no longer pink inside. Serve hot with Parmesan cheese sprinkled on top.
