This is a delicous and healthy recipe that has been served at every holiday dinner I can remember in my family. I like to make anytime during the year, but it is especially great when I know that there will be someone who needs gluten free choices on the menu. This chicken soup is so hearty and delicious that you will never miss the noodles.

Recipe Ingredients for Italian Wedding Soup

2 quarts Chicken Broth
32 ounces fresh spinach
24 ounces ground turkey, 1/2 inch meatballs
8 eggs, beaten
1 1/2 cups parmesan cheese, freshly grated

Recipe Directions for Italian Wedding Soup

  1. Set aside about a cup of broth and bring the rest of the broth to a boil in a large soup pot. Add in the spinach and meatballs until the meatballs are cooked. TIP: Make your own homemade or use prepared gluten-free broth. Check out http://www.glutenfree.com/ for more information on finding gluten free prepared foods and ingredients. You may have to research canned broth before buying to be sure it is gluten free.

  2. Meanwhile, whisk about 5 or 6 eggs in a medium sized bowl and then add in the reserved cup of broth. Next stir in the grated Parmesan or Romano cheese. Make sure the cup of broth is no warmer than room temperature or you will end up with a big egg ball.

  3. Slowly add this mixture to the boiling broth, spinach and meatballs mixture already cooking. Let it drizzle in in ribbons. At the same time, whisk the hot broth gently as you add the mixture. It will separate the bits of egg into a nice texture that will take the place of noodles or pasta. After all is added, gently boil for a few minutes. Don't add salt to this recipe since cheese is salty enough. Serve with grated cheese on the side to sprinkle on top.
