Italian Wedding Soup Recipe

nice healthy soup, homemade with lots of veggies. traditionally has egg whisked in at the end but I leave it out as a personal preference. Can substitute spinach for chard if desired.

Recipe Ingredients for Italian Wedding Soup

1 c. onion, diced
1 c. carrot, diced
4 cloves garlic, minced
7 c. low sodium chicken broth
15 oz. navy beans, rinse & drain
3/4 c. dry macaroni (campanelle ditalini or any thick short pasta will work)
1/2 lb swiss chard (rainbow or red), wash, cut stem and leaves into bite size pieces
2 tbsp. chopped fresh oregano (or 2 tsp dried)
1/2 tsp. Salt
1/2 tsp. Pepper
1/4 lb. italian sausage
1/2 lb. ground beef
1/3 c. saltine crackers, crushed
1/4 c. milk (mix w/bread crumbs)
1 tbsp. yellow mustard
2 tbsp. minced onion
1 tsp. basil
1 tsp. oregano
1 large egg
1/2 tsp salt
1/4 tsp pepper

Recipe Directions for Italian Wedding Soup

  1. the first ten ingredients are for the soup. the rest are for the meatballs.

  2. Mix all the meat ball ingredients and form into small meatballs approximately 3/4" in diameter. bake the meatballs at 350 till cooked through approx. 15-20 min.

  3. Heat reserved drippings from meatballs in 5-6 qt. dutch oven (or large sauce pan) over medium heat; add onion, carrot, & garlic. Cook 2 minutes, stirring, reduce heat to low. Cover pot and cook 10 minutes.

  4. Add broth; bring soup to a boil. Stir in meatballs, beans, pasta (I normally cook pasta separate and add it before eating, for crock-pot use or so I can freeze), chard, oregano, salt and pepper. Reduce heat to low, cover pot and simmer 10 minutes, stirring occasionally until pasta is tender.
