Beef or lamb soup with orzo pasta and fennel

Recipe Ingredients for Italian Wedding Soup

10 2/5 oz ground beef
2/3 cup fennel, diced
2 tbsp dried onion
2 cloves garlic
4 cups beef broth
2 cups water
1 tsp oregano
1/4 tsp black pepper
2 3/10 oz pasta
4 oz spinach

Recipe Directions for Italian Wedding Soup

  1. Saute beef, fennel, onion (can substitute 1 medium onion) and garlic together until meat is browned and vegetables are nearly tender. Drain fat if necessary.

  2. Add broth, water, and spices. Simmer for 10 minutes.

  3. Stir in pasta. Return to boiling and heat at medium for 10 more minutes or until pasta is done.

  4. Stir in spinach and serve.

  5. Can garnish with Parmesan cheese.
