Italian wedding soup is a mixture of meats and vegetables. I chose to use lean ground beef and chicken as my two meats. I also used carrots, celery, cabbage, diced onion. I boiled it all together in the chicken broth to make a soup. I cook my pasta separately so that the soup is easy to freeze after you are done eating it.

Recipe Ingredients for Italian wedding Soup

2 lb lean ground beef
2 lb boneless chicken
3 eggs
2 cups dried bread crumbs
1/4 cup parsley
1/2 tsp cayenne pepper
1/2 cup onion diced
1 tablespoon dried sage
4 cloves minced garlic
1 lb carrots
1 lb celery
1 tsp oregano
6 tbsp,+crumbled bay leaves
12 cups chicken broth
1 tablespoon salt
1 tablespoon black pepper
1 tsp Italian seasoning
2 cups cabbage
1/4 cup Parmesan cheese
2 lb orzo pasta

Recipe Directions for Italian wedding Soup

  1. Make a meatball mixture from the lean ground beef and seasoning

  2. Boil the chicken and meatball in the chicken broth

  3. Dice the onion, cabbage, garlic and carrots

  4. Once it comes to a strong boil add the vegetables

  5. Add salt and pepper and some Italian seasoning to the soup and let simmer until vegetables and meat are cooked thoroughly.

  6. Cook pasta and serve with soup
