Makes about 8 servings. If everyone needs to have meat with their dish, be sure to add 2 more chicken thighs, or to chop up your chicken when putting it in. I enjoy eating a single cup serving of this in between meals to keep me from getting hungry, so I don't always need chicken. :) SUPER EASY!

Recipe Ingredients for Italian Veggie Soup

1 NLEA serving Carrots, Baby
2 cup, sliced Onions
2 cup pieces Mushrooms
6 cup Diced Tomatoes
6 thigh, bone and skin removed Chicken, Thigh, Meat Only
2 tsp. dry mix Slow Cookers Italian Herb Chicken Seasoning

Recipe Directions for Italian Veggie Soup

  1. Place the chicken in the bottom of your slow cooker.

  2. Chop up all veggies and throw them into the slow cooker.

  3. Mix the seasoning mix with the cup of water, then pour over other ingredients.

  4. Open two large cans of diced tomatoes (approx. 6 cups) and pour in. Be sure not to drain, because the juice from the tomatoes adds flavor for the soup base.

  5. Turn your crock pot on high for 7-8 hours.
