A fancy, italian flavored omelet with lots of rich cheese. To decrease the calories: switch the milk for water, use less or low-fat cheese.

Recipe Ingredients for Italian vegetarian Omelete

2 eggs
1 cooking spray
1 salt to taste
1 tsp herbs
2 tbsp ricotta cheese, part skim
4 spears asparagus
1 oz mozzarella, part skim
1 pepper to taste
1/4 cup spinach
1/4 cup skim milk

Recipe Directions for Italian vegetarian Omelete

  1. Microwave the spinach & asparagus spears until slightly soft. Mix with ricotta while hot.

  2. Beat eggs with milk, herbs, salt and pepper.

  3. Heat frying pan on medium & spray with cooking spray.

  4. Add egg mixture to pan, making sure to coat whole surface. Lift edges periodically & tilt pan to let egg mixture run underneath.

  5. When it is almost done, coat surface with mozzarella, then turn off heat.

  6. After it has sat for a couple of minutes to finish cooking/melt the cheese, carefully lift the edges all around to unstick it from the pan.

  7. Pour the vegetable mixture on half of the circle, carfully fold over the half on top & slide it out of the pan.
