Italian Vegetable Topping Recipe

I could not get the recipe builder to include tagged items, so in the directions below I have included ingredients in addition to those in the recipe and you would have to add those into your food log manually.

Recipe Ingredients for Italian vegetable topping

5 small zucchini, cut in half lengthwise
1/2 onion, sliced thinly
1 red pepper, julienned
10 oz mushrooms, sliced
4 T grated parmesan

Recipe Directions for Italian vegetable topping

  1. spray a pan with olive oil Pam and place the zucchini into the pan, bake @ 400 for 40 minutes, turning over after 20 minutes

  2. spray an oven proof pan with olive oil Pam and saute the mushrooms with 5 crushed garlic cloves and the italian sausage (I used one serving of Trader Joe's chicken Sicilian uncooked sausage) until cooked and browned

  3. add onion and red pepper to mushroom mixture and cook, and then add 1 cup of crushed tomatoes

  4. slice two servings of polenta so that there are 4 - 6 polenta rounds

  5. push the vegetable / sausage mixture to one side of the pan and place one serving of polenta on the bottom of the pan; place 1/2 of the zucchini slices over the polenta and sprinkle with 1 T of grated Parmesan; then place 1/2 of the vegetable / sausage mixture over the zucchini and sprinkle with the 1 T of parmesan cheese

  6. bake, uncovered in a 350 oven for 30 minutes

  7. The ingredients that I have tagged and that are not listed in this recipie are: 1 Trader Joe's uncooked chicken Sicilian sausage (so this is one sausage, which is a serving, for two people) - I removed the sausage from it's casing when adding to the mushrooms; 2 servings of Trader Joe's organic polenta; 4 servings (a serving is 1/4 cup) of Cento crushed tomatoes.
