Recipe Ingredients for Italian Vegetable Soup

404 grams Fresh Boneless Skinless Chicken Thigh Cutlets
40 grams Onion Soup Mix
40 grams Vegetable Recipe Soup and Dip Mix
28 oz Diced Tomatoes
2 cup, chopped Carrots
1 medium raw Onion Yellow
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
1 1/2 cup, diced Celery
6 cup (8 fl oz) Water
2 cup Pasta Penne Rigate
3 tsp Italian Seasoning
1 tsp Garlic Powder
2 tsp Pepper, Black
1 teaspoon Worcestershire Sauce
2 cans Tomato Soup, canned, condensed

Recipe Directions for Italian Vegetable Soup

  1. Saute diced celery, carrots, onion, and red pepper in 2 tbsp of olive oil until beginning to soften. Add 6 cups of water, diced tomatoes (including fluid), onion soup mix, pepper, garlic powder, Worcestershire sauce, and vegetable soup mix and simmer on medium heat for approximately 20 minutes.

  2. While soup is simmering, cut boneless skinless chicken thighs into bite size pieces and saute with one tbsp of olive oil until cooked through. Add chicken, pasta, both cans of condensed tomato soup and Italian seasoning to soup pot and simmer on medium-low heat for another 30 minutes. Season to taste and serve!
