Easy use of canned and frozen vegetables to make a filling and nutritious meal! I used Italian mixed vegetables, but any sort should work and will only slightly change the nutrition information. I also use low sodium vegetable broth which reduces the total sodium.

Recipe Ingredients for Italian Vegetable Soup

32 ounces low sodium vegetable broth
16 ounces frozen mixed vegetables
10 ounces frozen spinach
15 ounces red kidney beans
16 ounces diced tomatoes
1 tbsp sugar

Recipe Directions for Italian Vegetable Soup

PUt everything in a pot and simmer until warm! Garnish with Parmesan cheese if you so choose. Serve with 100 Calorie Smart Bagel and Light Babybel for a BIG LUNCH that is low cal and keeps you full.
