A yummy vegetarian version of eggplant parm w/o the parm

Recipe Ingredients for Italian Vegetable Casserole

1 eggplant
1 zuchinni
1 roasted red pepper
1/4 cup olive oil
1/2 tsp salt
1 cup pasta sauce
4 oz mozzarella cheese, shredded
1/4 tsp garlic powder
1/2 tsp oregano

Recipe Directions for Italian Vegetable Casserole

Slice the eggplant and zuchinni in thick slices. Chop up the red pepper. Brush the eggplant and zuchinni with olive oil and grill over medium high heat, about 3-4 minutes per side. Sprinkle with salt. Spray a casserole with cooking spray and cover the bottom with the grilled vegetables. Sprinkle the chopped red pepper on top. Cover with pasta sauce and cheese. Sprinkle the oregano and garlic powder on top. Bake at 350 for 20 minutes or until heated through and cheese is brown and bubbly.
