Italian Turkey Meatloaf Recipe

Variation on "Italian-Style Turkey Patties" which were pan-fried and contained the cheese inside.

Recipe Ingredients for Italian Turkey Meatloaf

1 1/4 lb lean ground turkey
1/3 c oatmeal
1 T lemon juice
1 T Olive oil
1 t salt
1 t rubbed sage
1/4 t pepper
1 egg
2 T roasted red peppers
3 slices provolone cheese

Recipe Directions for Italian Turkey Meatloaf

  1. Grind oatmeal coarsely in food processor.

  2. Chop red peppers fine, or use Trader Joe's Roasted red pepper and eggplant spread.

  3. Mix all ingredients except the cheese well.

  4. Form into a loaf.

  5. Bake in 375 oven for 45 minutes.

  6. Add cheese on top for last 15 minutes.
