Recipe Ingredients for Italian Tofu Veggie Scramble

1 cup Spinach
1/2 cup Stewed - Italian Recipe
1 cup pieces Mushrooms
4.445 oz Tofu, Firm
1 tbsp Olive Oil
0.2 cup Quinoa
1 clove Garlic
1 serving Tamari

Recipe Directions for Italian Tofu Veggie Scramble

Cook quinoa and set aside. Sautee quarter block of chopped firm tofu in tamari and set aside. Sautee ten chopped mushrooms and set aside. Sautee garlic till light brown, add spinach and half cup chopped stewed tomatoes. When spinach is wilted, add tofu, mushrooms and quinoa. Stir to heated sufficiently and serve. Makes one hearty serving.
