Recipe Ingredients for Italian Summer Squash Polenta Bake

1 cup carrots, sliced
1 medium zucchini
1 medium yellow squash
1 onion, chopped
1 red bell pepper, chopped
1 cup marinara sauce
4 T. olive oil
1 pinch garlic salt
1 black pepper
1 cup shredded mozzarella cheese
1/2 cup parmesan cheese, grated
8 ounces polenta

Recipe Directions for Italian Summer Squash Polenta Bake

  1. Preheat oven to 350 degrees.

  2. Saute vegetables in a small amount of olive oil.

  3. Season with garlic salt and pepper.

  4. Pour in marinara sauce.

  5. Stir, cover, and simmer until vegetables are slightly tender.

  6. Slice polenta into thin circles. Pan fry in hot oil until slightly brown. (app. 3 minutes per side)

  7. Layer the slices in a casserole dish.

  8. Spoon the vegetable mixture over polenta, then sprinkle with cheeses.

  9. Bake in oven for 30 minutes.

  10. Let cool for 5 minutes before serving.
