Baked zucchini in rice, eggs, and cheese.

Recipe Ingredients for Italian Style Zucchini Bake

1/2 lb. ground beef
1 c. chopped onion
1 clove garlic
1 lb. zucchini, sliced
3 c. cooked rice
1 c. grated monterey jack cheese
4 eggs
3/4 c. nonfat milk
1 tsp. pepper
1 tsp. garlic salt
15 oz. can tomato sauce
1/2 tsp. dried basil
1/2 tsp. dried oregano

Recipe Directions for Italian Style Zucchini Bake

  1. Cook beef, onion and garlic.

  2. Add zucchini, cover and cook 3-4 min.

  3. Remove from heat.

  4. Stir in rice and cheese; mix well.

  5. Combine eggs, milk, salt, and pepper.

  6. Stir into rice mixture.

  7. Place in greased, shallow 2 quart casserole dish.

  8. Bake at 350 for 30 minutes or until set.

  9. Meanwhile, blend tomato sauce and seasoning.

  10. Simmer 5 minutes.

  11. Cut zucchini mixture into squares and serve with tomato sauce.

  12. Sprinkle with Parmesan cheese.
