This is a low calorie, high protein soup. I did use pasta with this soup but it was Barilla Whole Grain Medium Shells and the site doesn't recognize that product.

Recipe Ingredients for Italian Style WEdding Soup Sans Pasta

1 c. Progresso Bread Crumbs Italian Style
2 egg, whole
3 tbsp olive oil
20 c. water
1 medium yellow onion
6 oz. baby spinach
60 g Chicken Bouillon Cubes
1 tsp salt
1 lb. Ground Turkey, 85% lean

Recipe Directions for Italian Style WEdding Soup Sans Pasta

  1. Combine bread crumbs, eggs, ground turkey, salt, and italian seasoning (to taste) in a bowl and form smallish meatballs.

  2. Preheat skillet with olive oil.

  3. Brown meatballs on both sides.

  4. Meanwhile, chop onion along with 4 cloves of garlic. Sweat in the pot you plan to use for your soup.

  5. When onion and meatballs are ready, add spinach, bouillon, and meatballs into soup pot. Add water. Bring to a boil and reduce heat. Let simmer for thirty minutes. Add pasta if desired.
