Recipe Ingredients for Italian-style Stuffed Bell Peppers

2 tsp olive oil
2 links spicy Italian chicken sausage
1 1/4 pounds lean ground turkey
1 large onion, chopped
4 cloves garlic, minced
1 T Italian seasoning
1 T basil
2 tsp oregano
2 medium zucchini, chopped
3 ounces broccoli slaw
14 1/2 ounce diced tomatoes, no salt added
1 can tomato paste
4 red bell peppers
2 tsp olive oil
1/2 tsp salt
1 tsp pepper
2 oz Romano cheese, grated

Recipe Directions for Italian-style Stuffed Bell Peppers

  1. Preheat oven to 350 degrees.

  2. Cut pepper in half length-wise and arrange in a 9X13 baking pan. Drizzle 2 tsp of olive oil onto the peppers and massage to cover inside and out. Place peppers into oven to pre-cook for 10-12 minutes or until beginning to soften.

  3. In a large saute pan, heat 2 tsp of olive oil. Dice sausages into small chunks and add to the olive oil. Once the sausage begins to brown, add onions. Cook until they begin to soften and turn translucent.

  4. Add turkey, garlic, Italian seasonin, basil, oregano, salt and pepper. Break up the turkey as it browns in the pan.

  5. Add broccoli slaw to the meat mixture and stir to combine. Let cook 2-3 minutes, then add the chopped zucchini and stir to combine.

  6. Add the diced tomatoes and tomato paste. Mix well. Let simmer 5-10 minutes so flavors begin to combine. Adjust seasoning as needed.

  7. Remove peppers from oven and fill with meat and vegetable mixture. Top each filled pepper with 1/2 tablespoon of grated romano cheese.

  8. Place pan of peppers back into the oven for 10-15 minutes or until cheese is melted, peppers are soft and filling is heated through.
