A very easy and relatively quick full meal dish that could easily feed 6 with some sides. Don't be daunted by the number of ingredients.

Recipe Ingredients for Italian-Style Quiche

1/2 cup TVP
3/4 cup frozen peppers
1/4 cup frozen onions
1 1/2 oz elbow pasta
1 tsp poultry seasoning
1 tsp Worcestershire sauce
1 tsp cumin
1 tsp onion powder
1 cup frozen cut leaf spinach
5 large egg whites
1 large egg
1 clove garlic
2 tsp basil, dried
1/2 tsp marjoram
1/2 tsp thyme
1/2 tsp rosemary
1/2 tsp parsley
2 servings (1 cup) tomato sauce
1/4 cup diced tomatoes
2 servings ( 1/2 cup) 2% mozzarella cheese
1 tsp garlic flakes

Recipe Directions for Italian-Style Quiche

  1. Cook pasta until tender.

  2. Preheat oven to 350.

  3. Mix TVP with 1/2 cup water and poultry seasoning, worcestershire, cumin, and onion powder.

  4. Thaw frozen veggies separately.

  5. In a round stone pie dish, place pasta evenly on the bottom.

  6. Place in layers the following: TVP mixture, peppers, onions, tomato sauce, spinach, and diced tomatoes.

  7. Mix egg with remaining spices well.

  8. Add cheese evenly on top and slowly cover the entire dish evenly with egg mixture.

  9. Bake until completely set, for about 25 mins.

  10. Allow to cool then serve.
