Easy to prepare and full of Mediterranean flavour. Use large potatoes, such as Bintje, Desiree or Spunta varieties.

Recipe Ingredients for Italian-style Baked Potatoes

1 1/2 tbsp olive oil
4 large potatoes
2 cloves garlic, crushed
1 tbsp fresh rosemary leaves
1 tsp sea salt
1/8 tsp freshly ground black pepper

Recipe Directions for Italian-style Baked Potatoes

  1. Preheat the oven to 220C (425F).

  2. Cover the base of a metal baking dish, preferably non-stick, with olive oil and place it in the oven for 2-3 minutes.

  3. Peel the potatoes and cut them into 2.5 cm (1 in) cubes: Place the potatoes in the hot oil and sprinkle with the crushed garlic and rosemary. Bake the potatoes for 40 minutes, tossing two or three times. Reduce the heat if necessary.

  4. In the final 10 minutes of the cooking, sprinkle the potatoes with sea salt and season with a little pepper.
