Light citrus infused recipe from "the accidental veg"

Recipe Ingredients for Italian Stew

4 celery stalks, chopped
4 carrots, chopped
3 medium onions, chopped
47 g lemon
400 g tomatoes, chopped
1 1/2 tbsp olive oil
50 ml cider vinegar
200 ml bouillon, vegetable
100 g cannellini beans, cooked
100 g borlotti beans, cooked
3 garlic cloves, crushed

Recipe Directions for Italian Stew

  1. Heat oil and begin to sautee onion.

  2. Add garlic, heat until soft.

  3. Add the rest of the veg and cook through for 5minutes.

  4. Add the cider vinegar (or use white wine).

  5. Cook for another few minutes.

  6. Add tomatoes and stock.

  7. Cook for 10minutes.

  8. Add seasoning and beans and cook for another 5-10 minutes
