A very light cabbage slaw that goes very well on sausages, burgers, and sandwiches.

Recipe Ingredients for Italian Slaw

1/3 head cabbage
2 T diced onion
2 T diced green pepper
1/4 cup olive oil
2 T lemon juice, of 1 lemon
1 1/2 T capers, drained & chopped
1 t fennel seed
2 T dried parsley
2 T oregano
2 t whole black peppercorns
1 T chopped garlic
1 t salt

Recipe Directions for Italian Slaw

  1. Shred or slice/chop cabbage into slaw.

  2. Combine cabbage, onion, and green pepper.

  3. Combine olive oil, lemon juice, capers, and garlic.

  4. Grind fennel seed, parsley, oregano, peppercorns, and salt (I use a mortar and pestle).

  5. Combine olive oil mixture with spice mixture. Mix vigorously as a dressing.

  6. Combine dressing with cabbage mixture and mix.
