Recipe Ingredients for Italian Sausage & White Bean Stew

28 oz crushed tomatoes
15 oz cannellini beans, drained and rinsed
1/2 lb turkey sausage, casings removed
1 red onion, diced
3 cloves garlic, minced
3 cups kale, rinsed and chopped
1 tsp dried oregano, crushed
1/2 tsp salt
1/2 tsp pepper
1/2 cup chicken stock

Recipe Directions for Italian Sausage & White Bean Stew

  1. Crumble and brown sausage in pan for about 8 minutes.

  2. Add onion, garlic, salt, pepper and oregano and sauté until fragrant (it said two minutes, but I did it for about 6 on a lower heat so I didn?t burn the garlic).

  3. Add tomatoes and beans. Let beans heat through. Add the stock and optional red pepper flakes if you like it spicy.

  4. Add kale and simmer until the leaves wilt (after this, I let it simmer for about 15 minutes on a really low heat so the flavors would mix. The recipe said to serve after they were wilted, though. Your call.).

  5. Serve with shredded parmesan cheese (I didn?t use this, but it called for it).
