Italian vegetables & sausage, skillet dinner

Recipe Ingredients for Italian Sausage & Veg

450 grams Italian Sausage, links
3 cloves garlic, chopped
1 onion, large, sliced
1 green pepper, sliced
4 oz mushrooms, chopped
28 oz tomatoes, canned, chopped
1 T oregano, dried
2 t basil, dried
1 T parsley, dried

Recipe Directions for Italian Sausage & Veg

  1. In a large non-stick skillet, cook the Italian sausage links until nearly done, about 10-12 minutes. Slice the cooked links and set aside.

  2. In the same skillet, saute the garlic for about 2 minutes. Add onion slices & cook 5 minutes. Add green pepper and cook 3-4 minutes. Add mushrooms and cook another 2 minutes.

  3. Add canned tomatoes, herbs & seasoning to taste. Add sausage slices.

  4. Simmer over medium low heat about 20-25 minutes.

  5. Serve over baked potatoes, pasta or rice.

  6. Garnish with Parmesan or other cheese as desired.
