Great vegetable side dish to pair with an Italian meal such as pasta and herb-crusted Parmesan chicken.

Recipe Ingredients for Italian Roasted Vegetables

2 large raw Zucchini
3 cup Yellow Squash
1/2 cup Stewed Tomatoes, Italian Recipe
1/2 cup Fancy Mozzarella Shredded Cheese

Recipe Directions for Italian Roasted Vegetables

  1. Spray the bottom of a casserole dish with Olive oil spray. Slice the zucchini and squash into equal sized pieces and spread into bottom of the casserole dish with the sliced onions. Cover with the can of Italian Stewed tomatoes. Sprinkle evenly with shredded Mozzarella cheese. Bake at 350 F covered until slightly bubbling (~25 min). Bake for the last 5 minutes uncovered, or until the cheese is golden.

  2. *Note: There should be an equal amount of squash and zucchini. Approximately, 2 whole of each.
