Recipe Ingredients for Italian Roast Vegetables

1 red pepper, chopped into 1cm rounds
1 green pepper, chopped into 1cm rounds
2 red onions, chopped into 1cm rounds
2 zucchinis, chopped into 1cm rounds
1 large field mushroom, chopped into 1cm slices
150 punnet Tomatoes
6 cloves garlic, skin removed
1 tbsp extra virgin olive oil
1/4 cup water
3 tbsp thyme (basil or parsley also work well)
1 salt
1 pepper

Recipe Directions for Italian Roast Vegetables

  1. Wash and slice all vegetables, leave tomatoes and garlic whole.

  2. Toss all the vegetables and garlic together in a roasting pan with the olive oil, thyme, water, salt and pepper.

  3. Place in a pre-heated oven (180c) for 15-20 minutes or until vegetables are soft or have turned golden brown.
