Recipe actually uses 2 Cups of the Uncles Ben Instant Brown rice but when I enetered into the analysis it would not select the correct rice. So for the sake of calculating caloires I changed it to 1 cup. This receipe is from "Low Cal Dieting for Dummies" They list 250 calories per serving for this dish.

Recipe Ingredients for Italian Rice Salad

1 cups (Uncle Ben's) Instant Brown Rice - Whole Grain Brown Rice, cooked
2 cups cherry tomatoes, halved
1 cucumber, peeled, seeded and diced
1 tbsp capers, drained and chopped
8 black olives, pitted and finely chopped
4 oz provolone cheese, diced
1/4 cup basil, finely chopped
1/4 cup olive oil
2 tbsps lemon juice

Recipe Directions for Italian Rice Salad

  1. Combine rice, tomatoes, cucumber, capers, olives, cheese and basil in a large bowl.

  2. Toss the ingredients to mix well.

  3. Just before serving, drizzle in the olive oil and lemon jice and toss again.

  4. Season the salad with Salad and pepper to taste.
