Use any kind of frozen veggies you want. The garbanzo beans are messed up, use 1 cup or whatever gets you about 160 calories worth.

Recipe Ingredients for Italian Red Potatoes w/ Veggies

10 oz red potatoes
1/5 cups garbanzo beans
2 cups green beans
1/4 red onion
1 tbsp balsamic vinegar
2 tsp extra virgin olive oil
1 tsp dried basil
1 tsp dried oregano
1/2 tsp dried marjoram
1/2 tsp dried parsley
1/2 tsp dried thyme
1/2 tsp savory
1/2 tsp red pepper flakes
1 tsp minced garlic
2 tsp garlic salt
1 tbsp Parmesan

Recipe Directions for Italian Red Potatoes w/ Veggies

  1. Preheat oven to 375.

  2. Quarter the potatoes and throw in a baking dish along with the veggies and the beans.

  3. Add the olive oil, balsamic vinegar, and all the seasonings. Mix well. Cover with foil.

  4. Bake for 30-35 minutes or until potatoes are tender.

  5. Top with Parmesan and stir.
