Recipe Ingredients for Italian Red Lentil Soup

3 cup Lentils
7 cup (8 fl oz) Water
1 tbsp Olive Oil
1 tbsp Butter
1 medium (2-1/2" dia) Onions
2 medium Carrots
2 clove Garlic
2 stalk, medium (7-1/2" - 8" long) Celery
1 oz Wine, Table, Red
2 tbsp Lemon Juice, Canned Or Bottled
1 1/2 tbsp Molasses

Recipe Directions for Italian Red Lentil Soup

  1. Put the lentils and water in the slow cooker, cover and cook on LOW for 3 to 4 hours.

  2. In a medium-sized skillet over medium heat, heat the oil and butte together until the butter melts. Add the onion, celery, and carrots, and cook, stirring a few times, until just softened, about 5 minutes. Stir into the partially cooked lentils, cover, and continue to cook on LOW for another 3 to 4 hours.

  3. Stir in the wine, lemon juice, and molasses. Season with salt and plenty of fresh black pepper. Add water to your taste to thin if the soup is too thick. Cover and continue to cook on LOW for another 30 minutes.

  4. Ladle into bowls and serve hot topped with green onions and a drizzle of red wine vinegar.
