Recipe Ingredients for Italian Potato Salad

450 grams potatoes , new or salad
12 cherry tomatoes, cut in half
1/2 red onion, finely chopped
4 tblsp basil, torn to shreds
5 tblsp extra virgin olive oil
2 tblsp balsamic vinegar
1 garlic clove, minced
1 tsp salt
1 tsp pepper
25 gram grated parmesan cheese

Recipe Directions for Italian Potato Salad

  1. Cook potatoes 20 minutes in salted water, till done all way thru. Drain

  2. Cut in half while warm.

  3. Combine warm potatoes with onion, tomato and basil in large bowl.

  4. Put all dressing ingredients ( oil, vinegar, garlic S&P) in jar, shake to mix. Pour on salad.

  5. To serve arrange over salad greens, sprinkle with grated parmesan.
