Italian Pot Roast - Altered Recipe

I altered this recipe to have lower calorie ingredients and a smaller roast. I also changed the # of servings.

Recipe Ingredients for Italian pot roast - altered

8 ounces sliced mushrooms
1 medium onion
2 pound beef chuck roast
1 packet onion soup mix
14 ounces beef broth, low sodium
8 ounce tomato sauce
3 tablespoons tomato paste
1 teaspoon pepper
1 teaspoon italian seasoning
2 tablespoons cornstarch
2 tablespoons water

Recipe Directions for Italian pot roast - altered

  1. Slice onion. Place onion and mushrooms in bottom of crock pot.

  2. Rub roast with pepper and place on top on veggies.

  3. Pour packet of onion soup on roast.

  4. Pour beef broth and tomato sauce on roast.

  5. Cook on high for 5 1/2 to 6 hours, or until tender.

  6. Remove roast from pot and cut into large pieces.

  7. Skim fat of top of sauce.

  8. Add tomato paste and italian seasoning to sauce and mix.

  9. Mix cornstarch and water until sooth and add to sauce. Mix well.

  10. Cook for additional 20 - 30 minutes on high.

  11. Add roast back to sauce and cook for additional 5 - 10 minutes.

  12. Serve over rice or noodles.
