Recipe Ingredients for Italian Peasant Soup

4 c chicken broth or 4 c water and 2 Tbs chicken bullion
15 oz tomatoes, crushed
15 oz white beans
1/2 tsp Italian Seasoning
1 tsp garlic, crushed
1/2 tbs olive oil
1/2 c onion, chopped
2 c cabbage, chopped
1 c carrots, chopped
3 c egg noodles, uncooked (small ribbon pasta)

Recipe Directions for Italian Peasant Soup

  1. In 4 qt pot, simmer broth, tomatoes, beans, seasoning, and garlic.

  2. Saute vegetables in olive oil until tender. Add vegetables to broth mixture.

  3. Stir in pasta and simmer 10 minutes more.
