A light pasta salad, perfect for summer.

Recipe Ingredients for Italian Pasta Salad

10 piece Tomatoes, Sun-dried, Packed In Oil, Drained
2 Serving Tomatoes
10 leaves Basil, Fresh
2 clove Garlic

Recipe Directions for Italian Pasta Salad

  1. Cook the pasta for approx. 7 minutes.

  2. While the pasta is cooking, take 5 of the sun dried tomatoes and process them to form a paste. If needed, use some of the olive oil here.

  3. Finely chop the garlic and stir into the paste.

  4. Cut the cherry tomatoes in half, and chop up the remaining sun dried tomatoes.

  5. Once the pasta has cooked, drain it, and stir in the paste and all the tomatoes. Add some olive oil.

  6. Tear up the mozzarella and the basil leaves and garnish.

  7. Chill for at least an hour, or eat once done - whatever floats your boat.
