Lightly breaded and seasoned baked orange roughy. I use reduced fat parmesan cheese.

Recipe Ingredients for Italian Orange Roughy (Bill Phillips)

12 oz Orange Roughy
1/8 cup breadcrumbs
1/2 tsp Italian seasoning
1/8 cup parmesan cheese
1 egg white

Recipe Directions for Italian Orange Roughy (Bill Phillips)

  1. Preheat oven to 400. Lightly coat a baking sheet with cooking spray.

  2. Combine breadcrumbs, italian seasoning and parmesan cheese in a pie plate.

  3. In a mixing bowl whisk egg white until slightly foamy.

  4. Lightly brush both sides of fish with egg white, coat with breadcrumb mixture, and arrange on baking sheet. Sprinkle with parsley (optional) and bake until fish is opaque (about 20 minutes).
