Delicious for breakfast, lunch or dinner.

Recipe Ingredients for Italian Omelette

1 tbl Olive Oil
3 large Eggs
4 Fresh Mushrooms, sliced
1/4 cup diced Zucchini
1/4 cup minced Red Bell pepper
1/4 cup minced Shallot
2 slices Canadian Bacon
2 small Tomatoes
2 tbl Light Sour Cream

Recipe Directions for Italian Omelette

  1. Preheat 10 inch non-stick skillet well.

  2. Add oil and let preheat until shimmering.

  3. Add Mushrooms and Zucchini and saute until mushrooms are beginning to caramelize (about 3 min.) Add Bell Pepper Shallot and Bacon and saute until just tender. Whisk eggs with a little water and pour over vegetables. Cook using traditional Omelette technique (see Julia Child). Turn out onto plate and top with a dollop of sour cream and diced tomato. Enjoy!
