From GI Diet. Another variation on the omelette. Can add more veggies for nutrition and flavour if desired.

Recipe Ingredients for Italian omelette

1 tsp canola oil
1/2 cup mushrooms (sliced)
1/2 cup egg beaters
1/2 cup tomato puree
1 tbsp basil or oregano (chopped, fresh)
1 oz part skim mozzarella cheese (shredded)
1 pinch ground pepper

Recipe Directions for Italian omelette

  1. In a small non stick pan, heat oil over medium high heat. Add the mushrooms and saute for 5 minutes or until tender. Transfer mushrooms to plate to keep warm.

  2. In bowl, using a fork, stir together liquid egg, tomato puree, basil, cheese, and pepper.

  3. Pour into frying pan and cook for about 5 minutes, lifting edges to allow uncooked egg to run underneath, almost until set.

  4. Sprinkle sauteed mushrooms over half of omelet.

  5. Using spatula, fold over the other half and cook for 1 minute
