classic italian mussels, to be eaten with a little white bread to mop the yummy juices.

Recipe Ingredients for Italian Mussels

250 g mussels
1 tbsp butter
1 tbsp minced onion
1/2 garlic clove
1/2 small tomato
1 dash oregano
1/8 cup dry white wine

Recipe Directions for Italian Mussels

  1. Put mussels in a container with water and leave them for 5 minutes while you prepare the other ingredients.

  2. Discard any that are haven't opened, and the ones that are chipped, broken, or otherwise damaged.

  3. In a strainer, wash them under the tap and shake them around. Discard any that haven't closed and clean the rest, cutting their beard if any, by pulling out towards the hinged side of the mussel.

  4. Melt butter in a small sized pot (larger if making more) and saute onions.

  5. Add garlic, tomato, oregano, salt & pepper to taste and cook until tomato is soft.

  6. Add wine and bring to a boil.

  7. Place mussels into pot, cover & steam for 4 minutes; remove the lid & stir the mussels. Discard any that haven't opened.

  8. Serve with the broth.
