Italian Meatloaf Recipe

This is a variation on my mother's recipe. Good comfort food, and great leftover!

Recipe Ingredients for Italian Meatloaf

1 lb. ground sirloin, 90/10
1 medium egg
1/2 medium onion, chopped
1/2 medium green bell pepper, chopped
1/2 medium red bell pepper, chopped
2 tsp garlic, minced
15 crackers, saltines, crushed
3/10 oz pecorino romano, freshly grated
1 tbsp oregano, fresh, chopped
1 tsp basil, dried
8 oz tomato sauce, divided

Recipe Directions for Italian Meatloaf

  1. Preheat oven to 350 F / 175 C.

  2. Mix ground beef, chopped vegetables and egg with your hands or with a spatula; mix in basil, oregano, about 1/2 of the tomato sauce, romano and saltines, adding more crackers if necessary.

  3. Shape meat mixture into a loaf (or other desired shape) in a baking pan (glass or metal). Cover with remaining tomato sauce.

  4. Place pan on center rack in preheated oven and bake at 350 F for one hour or until done.
