This is an experiment to find a healthier meatball recipe without beef and is a work in progress. I have tried it once so far and have made some changes, but will possible make more (less bread crumbs).

Recipe Ingredients for Italian Meatballs

1 pound lean ground turkey
1/2 pound Italian sausage
5 baby carrots
3 stalks of celery hearts
1/2 large onion
1/4 cup fresh flat leaf parsley
1 cup bread crumbs
1 teaspoon minced garlic
1/4 teaspoon salt
1/2 teaspoon fennel seeds
1/2 teaspoon dried basil
1/2 teaspoon oregano
1/2 teaspoon thyme
1/2 teaspoon ground black pepper

Recipe Directions for Italian Meatballs

  1. Preheat oven to 400 degrees

  2. Clean and coarsely chop the carrot. Put it in the food processor.

  3. Clean and coarsely chop the celery. Add it to the food processor.

  4. Wash the parsley and add it to the food processor.

  5. Coarsely chop the onion and add it to the food processor.

  6. Now, process the ingredients in the food processor until they are the consistency of a paste.

  7. Combine all ingredients in a large bowl.

  8. Place a cast iron skillet in the oven to preheat.

  9. Using a small cookie scoop, shape mixture into meatballs.

  10. Place the meat balls in the skillet and return to the oven. Cook for about 12 ? 15 minutes until they are firm to touch.

  11. Makes approximately 40 meatballs.
