Recipe Ingredients for Italian Meatballs

2 oz white bread
1/3 cup lowfat milk
1/2 pound ground pork
1/2 pound ground veal
1/2 pound ground beef
1/2 cup grated parmesan cheese
1/4 cup chopped parsley
2 t salt
1/4 cup grated onion
2 cloves minced garlic
1 large egg, beaten
1 ground black pepper

Recipe Directions for Italian Meatballs

  1. Pulse the bread in a blender/food processor to create crumbs. In a small bowl toss the crumbs with cold milk to re-hydrate.

  2. In a large bowl, combine crumbs, pork, veal, beef, parmesan, parsley, salt, onion, garlic, and egg. Mix until combined. Season the mixture with pepper.

  3. Gently form the mixture into 18 golf ball-sized balls and put on foil-lined baking sheet. Don't pack the mixture too tightly. Refrigerate balls for at least 1 hour or up to 24 hours.

  4. Preheat oven to 375 degrees. Bake the meatballs for approx. 30 minutes.
