Recipe Ingredients for Italian Meatball Soup

1 tsp olive oil
2 medium carrots
2 celery stalks
1 small onion
2 tbsp tomato paste
4 garlic cloves
1 tbsp italian seasoning
28 oz crushed tomatoes in puree
2 cups beef broth
1 1/2 cups water
10 oz meatballs, frozen and fully cooked
1 salt and pepper

Recipe Directions for Italian Meatball Soup

  1. Peel carrots. Finely chop carrots, celery, onion.

  2. Heat oil in 4 qt casserole or stock pot. Add carrots, celery and onion. Cook over medium heat 4-5 minutes or until vegetables begin to brown, stirring occasionally.

  3. Push vegetables to one side of pot. Add tomato paste; cook and stir 1-2 minutes or until tomato paste begins to carmelize.

  4. Add garlic and seasoning mix to pot and mix well. Stir in tomatoes, broth and water; bring to a simmer.

  5. Cut meatballs into quarters; add to soup. Simmer an additional 10-12 minutes; season to taste with salt and pepper.
