Makes 12 servings



This is made in an open rectagular 13x9x2 baking pan. It can be made with ground beef, turkey, or chicken. Mushrooms and peppers can be added. It freezes very well.

Recipe Ingredients for Italian Meal Casserole (Maureen's)

1 large onion
1 clove garlic
2 tablespoons butter
1 1/2 lbs. ground turkey
24 oz. marinara sauce
6 oz tomato paste
1 tsp. salt
1/2 tsp. oregano
1/4 tsp. basil
12 oz. whole wheat pasta
2 cups nonfat cottage cheese
1 egg
1 box frozen chopped spinach, thawed
1/2 lb. shredded low fat mozzarella
1/2 cup Parmesan cheese, grated

Recipe Directions for Italian Meal Casserole (Maureen's)

  1. EARLY IN THE DAY THAW THE 1 BOX OF FROZEN CHOPPED SPINACH, OR PARTIALLY THAW IT IN THE MICROWAVE ABOUT AN HOUR BEFORE ASSEMBLING THE CASSEROLE.

  2. Saute onion and garlic. Add mushrooms and peppers if you like (not listed above). Add meat and brown. Add tomato sauces and seasonings. Simmer 15 min. or longer. Cook pasta according to minimum (or less) time on package directiions. (Pasta will cook in oven, too). Squeeze out the water from the thawed spinach. Combine the thawed spinach, cottage cheese, and beaten egg. Butter or spray a large baking dish. Place thin layer of meat sauce on bottom. Add layer of cooked noodles, layer of spinach mixture, most of shredded mozzarella, and finally the remaining meat sauce. Place remaining mozzarella on top, followed by grated Parmesan. Bake at 350 degrees for 30 minutes. Cool about 10 minutes. Serve.
