This is a modification of the recepie at: http://www.italianchef.com/marinara.html 1/4 cup of olive oil 4 cloves of garlic sliced in half 1 35oz can of imported Italian tomatoes salt & pepper to taste 3 basil leaves, washed, patted dry and chopped

Recipe Ingredients for Italian Marinara

1/4 cup olive oil
8 cloves of roasted garlic
35 oz canned tomatoes
2 c fresh tomatoes
1/2 t sea salt
1/2 t pepper
4 T dried basil
1/2 tsp tarragon
1/4 tsp dried celery

Recipe Directions for Italian Marinara

  1. Place garlic cloves and in a medium sized pot.

  2. Mix half pure olive oil, half roasted garlic olive oil in.

  3. Turn heat to medium-low/medium and warm until oil begins to lightly bubble.

  4. Chop the canned tomatoes and add with their juices. Blanch and chop 1 beefsteak and 2 heirloom tomatoes into the pot.

  5. Fill empty tomato can 1/4 of the way with water and add to the tomatoes. Season with salt, pepper, basil, tarragon, and celery.

  6. Bring to a boil, then lower heat to a low simmer and cook/reduce until thickened, approximately 1 to 3 hours.

  7. Let cool and stand for 2 hours for flavors to blossom.

  8. Makes 4 cups of marinara
