Italian macaroni and cheese. I make it with reduced fat cheese, but this site wouldn't recognize them in the recipe so there you have it!

Recipe Ingredients for Italian macaroni and cheese

1/2 lb whole wheat pasta
4 oz mascarpone cheese
4 oz cream cheese
1 1/2 cups low sodium chicken stock
1 cup carrot
1 cup frozen baby peas
1/4 chopped sweet onion
1 tsp olive oil

Recipe Directions for Italian macaroni and cheese

  1. Cook pasta al dente according to package directions. Set aside.

  2. In a medium skillet, saute onion in olive until tender, about 5 minutes. Add in diced carrot and chicken stock and simmer on low until carrot is tender, about 8 minutes. Add peas and let simmer until peas are heated through.

  3. Stir in cheeses to vegetable mixture until melted and smooth. If it's a little to thick, add more chicken stock until it's thinned.

  4. Pour cheese and vegetable sauce over noodles and toss to coat.
