Fresh Italian Linguine with Turkey Meatballs and Tomato Fresca Sauce (made from scratch)

Recipe Ingredients for Italian Linguin with Turkey Meatballs and Tomato Fresca

8.8 oz (Garofalo) Organic Linguine
1 large egg Eggland's Best Egg
1 cup Bread Crumbs Italian Style
0.33 serving Real Mayonnaise
2 clove Garlic
0.33 tbsp chopped Onions
1 serving Green Onion
14.5 oz Ready-Cut - Diced Tomatoes
6 oz Roma Style Tomatoes
0.5 cup leaves, whole Basil, Fresh
1 1tsp Olive Oil
16 oz Fresh Ground Turkey - Lean

Recipe Directions for Italian Linguin with Turkey Meatballs and Tomato Fresca

  1. In a large pot, bring water and a dash of salt or oil to a boil (to avoid sticking).

  2. Add linguine and cook for 11 minutes or until desired texture.

  3. Drain and set aside.

  4. In a large bowl, combine egg, mayonnaise, breadcrumbs and ground turkey.

  5. Form meatballs and set aside.

  6. In pan, saute turkey meatballs, drain on paper towel thoroughly and set aside.

  7. In a smaller pot, saute onion, green onion, basil and garlic in olive oil.

  8. Add diced tomatoes and tomato paste and simmer through.

  9. Toss in turkey meatballs.

  10. Simmer for 20-30 minutes.

  11. Combine with linguine and enjoy!

  12. Add an optional sprinkle of Parmesan.
