Recipe Ingredients for Italian-inspired Summer Vegetable Soup

2 cups swiss chard, chopped
2 garlic cloves, minced
2 cups spinach, baby
2 small zucchini, cubed
1 medium sweet red pepper, chopped
1 celery stalk, chopped
1 cup lentils
6 cups vegetable broth
28 oz canned diced tomato, fire-roasted
1/4 tsp crushed red pepper flakes
2 tsp thyme, fresh, finely chopped
1 tsp fresh oregano, finely chopped
1/4 tsp black pepper
1/4 cup parsley, fresh, chopped
1/4 cup basil, fresh, leaves

Recipe Directions for Italian-inspired Summer Vegetable Soup

  1. 1. Place broth, salt and lentils in large pot and bring to a boil. Boil over high heat for 10 minutes.

  2. 2. Add chard, garlic, spinach, zucchini, red pepper, celery, diced tomatoes, red pepper flakes, thyme, oregano, and black pepper to the pot. Cover slightly and reduce heat to simmer for 10 minutes.

  3. 3. Stir in parsley and basil. Serve. Yields 1 cup per serving.
